If no color is specified for a subject, the teacher chip has gray text on gray background, which is unreadable.

Interesting observation: Setting the colour_fg for a subject to black (#000000) causes the text to be white, so that the chip is readable.

So this probably means we need to actually set a default color, instead of making this field optional?
